Fish Cooking Techniques:
Cooking time for seafood will depend upon the thickness of each piece, but like other foods, seafood continues to cook after being removed from the heat. To avoid overcooking, take fish off the grate when the center begins to turn opaque and the thickest part starts to flake when pressed with a fork. Most fish needs cooked to an internal temperature of 146 degrees Fahrenheit.

- 12 wooden skewers, soaked in water
- 1/4 C. soy sauce
- 1/4 C. honey
- 1 T. rice vinegar
- 1 tsp. minced fresh gingerroot
- 1 clove garlic, minced
- Pinch of pepper
- 12 lemon wedges
Lightly oil the grill grate and preheat grill to medium‑high heat. Slice salmon filet lengthwise into 12 long strips and thread each strip on a soaked wooden skewer. Place skewers in a shallow baking dish. In a medium bowl, whisk together soy sauce, honey, vinegar, minced gingerroot, minced garlic, and pepper. Pour mixture over skewers in baking dish and let marinate at room temperature for 30 minutes. Pour remaining marinade into a small saucepan. Place saucepan over grill and bring mixture to a simmer.
