- Combine the ingredients. In the saucepan, add the sugar, corn syrup, water, and cream of tartar. Stir gently to combine.
- Bring to a boil. Heat the mixture over medium heat, stirring occasionally until it begins to boil.
- Watch the temperature. Stop stirring and let the mixture cook until it reaches the soft ball stage (about 235°F–240°F).
- Remove from heat. Let the mixture cool slightly, then pour it into your prepared pan.
